Many people like my gazpacho. It can become your's too! It's delish because of all the fine ingredients:

4 or 5 medium tomatoes. Get the nicest ones, like organic or homegrown

3 large carrots

2 medium cucumbers

1 large white onion, or a few small ones

2 medium garlic cloves

a bunch of cilantro

3 pieces day old bread

juice of 1 lime

half cup red wine vinegar

half cup olive oil

black pepper

1 large can tomato juice

I just eyeball the amounts, but it's always good. Here's how to:

Take the items above - except the tomato juice - and blend them in a food processor or a blender.

Unless you're only making a small amount (which is crazy because this stays good for a week) you will need

to make 2 or 3 batches. Pour in large punch bowl. Add tomato juice and stir. It gets better after a day or two

as the garlic mellows and the flavors mingle. Just like your guests!

If you want to get fancy, garnish with croutons, red pepper, tomato, green onion, cilantro....

And just like that old commercial for Rice Cripsy Treats when the lady flicks flour on her face, you will

come off like you slaved over it.
